Chicken with Mole (pronounced moh-lay)


This Mexican chicken mole is rich and flavorful with seasoned chicken that is braised until tender. Mole is one of our very favorite Mexican cuisine classics.

Mexican Mole Sauce is made with layers of complex and bold flavors, simmered together over a long period of time before being blended until smooth. Contains fruit, chili peppers, nuts, several different spices, and chocolate. The taste is best described as somewhat spicy, and bittersweet with earthy undertones.

Barbacoa with Consomé


Hidalgo-style lamb barbacoa is a traditional Mexican dish that originated in the City of Hidalgo in Pachuca, Mexico.

It's made by cooking a whole lamb overnight in its own juices over a low fire, wrapped in agave leaves and placed in a pit covered with maguey leaves.

The meat is then shredded and served with consomé (broth) and tortillas.


Fill your tortilla with shredded barbacoa and garnish with your favorite toppings: cilantro, onions, lime juice, salt and don't forget the salsa!
